I’ll be the first to admit that simpler
living isn’t always easier, and there can be a learning curve.
I was so proud to show off to my aunt when
she visited that I had pressure canned several jars of
pole beans grown organically
from our garden last summer. My husband
commented on how tasty they were, and that the batch my aunt helped me pick and
steam that late summer day seemed even better, without that tough stringy part.
Whoops!
While I had recalled learning to snap beans at a child and watching my
mother can them, I apparently hadn’t learned how to pull the string off the
side of each one, so I missed that little detail until Aunt Ruby reminded me.
