Flour Sack Mama's Fresh Pick Southern Sandwich: Recipe and Mezzetta Giveaway


What does your favorite sandwich say about your picnic table?  My entry for the Mezzetta Make That Sandwich contest says, "Southern garden tradition with savory flare!"  I'm calling it Flour Sack Mama's Fresh Pick Southern Sandwich.  We started with fresh ingredients from our organic family garden, then we teamed them up with three Mezzetta Brand ingredients. The goal was to start with a familiar Southern favorite and complement that with fresh-picked greens and savory flavor variations. 


Southern Fried Zucchini Ingredients: 
Medium zucchini squash
1 1/2 cups white wheat flour
Sea salt, black pepper, dried lemon peel to taste
2 eggs
1/2 cup milk
1/3 cup finely chopped carrot
2 cloves finely chopped garlic
Half stick unsalted butter

Sandwich Spread Ingredients:
1/3 cup Mezzetta Homemade Style Basil Pesto 
1/3 cup nonfat Greek yogurt

Misc. Ingredients:
8 slices whole wheat bread
3/4 cup Mezzetta Sliced Greek Kalamata Olives (optional)
1 1/2 cups Mezzetta Deli-Sliced Roasted Bell Pepper Strips
Half bunch leaf lettuce
4 ounces thinly sliced mozzarella cheese
Half bunch dill

Directions:
After washing zucchini well, cut into thin slices.  If zucchini is organic, keep outer peeling on slices.
Blend sea salt, black pepper and dried lemon peel to taste.
Beat two eggs, add milk, then mix in finely chopped carrot and garlic.
Heat medium skillet and melt butter.
Dip each zucchini slice alternately in the egg mixture, then flour mixture, and repeat before placing immediately into skillet.  Turn each zucchini slice once with a fork, cooking until moderately soft and golden brown.  Remove from pan and drain on paper towels or clean rag.



Combine Mezzetta Homemade Style Basil Pesto and Greek yogurt to create sandwich spread.


Start building your sandwich by coating one slice of bread with your homemade sandwich spread.
Add thin layer of Mezzetta Sliced Greek Kalamata Olives (Our family insists that I make this the one optional ingredient, although I love them).
Add layer of fresh leaf lettuce.
Add warm, freshly cooked zucchini slices.  Cut to fit for a flatter sandwich.  
Add extra sandwich spread atop zucchini.
Add thinly sliced mozzarella cheese.
Add Mezzetta Deli-Sliced Roasted Bell Pepper Strips 
Add fresh dill
Coat second bread slice with sandwich spread and top the sandwich. 
Makes 4 large sandwiches or 16 party sandwiches when quartered.
